Welcome to Monty's Old Brick Tavern in Williston Village. As residents of williston since 1998 we always felt there was a real need for a local restaurant where you could come in a get great food and drinks in a relaxing atmosphere.
In 2004 this building became available and after an 18 month process of approvals and renovations we opened the Old Brick Cafe as a breakfast & lunch place. The renovations were extensive but the results were rewarded with a historial society recognition as the best commercial project of a converted historic structure into a commercial use. The before and after photos can be seen at the end of this page. This is my second major renovation of a historic building and it was really a labor of love to take something so old and adapt it to a modern use.
As a result of the ups and downs of restaurant ownership combined with the demands of two very young boys at home, the Old Brick Cafe closed after a good 2 1/2 year run. Slightly more than 1 1/2 years later we decided that the town was really missing an evening place to meet and have some great food and drink. We added a small bar to the front room and added a couple HD screens for a relaxing pub area.
We now have a loyal and passionate crew of servers and kitchen staff led by Chef Shawn Beede who will probably surprise you by stopping at your table to ask about your meal. We are always concerned about making sure you have a great experience here at Monty's because we know you can choose another restaurant for your valuable evenings out. The name Monty's came from our beloved Golden Retriever who was having some health issues at the time we were palnning the new restaurant. We had him with us for over 10 years and he was a people lover and loyal companian. Monty passed away on a beautiful sunny fall day in november 2009.
